Antica ricetta tipica dei nostri luoghi
Ingredienti :
500 gr. Farina di grano
duro
500 gr. Ricotta vaccina
ragusana
2 cipolle bianche
1 mazzetto di prezzemolo
Sale
Pepe nero
1 pezzettino di lievito
Olio evo
Preparazione:
1.
Tagliare la
cipolla a dadini piccoli
ed aggiungerla alla ricotta con il
prezzemolo finemente tritato
salare e pepare (consiglio) non esagerare con il sale poiché la ricotta è
abbastanza saporita
lavorare
con un cucchiaio per amalgamare il composto e lasciare riposare.
2.
Preparazione
della pasta, creare il classico vulcanetto con il suo bel cratere al centro
dove mettiamo un cucchiaino di sale ed il pezzettino di lievito versare
dell'acqua tiepida e sciogliere sale e lievito cominciare ad impastare
aggiungendo poca acqua per volta l'impasto deve venire consistente non molle
poiché dopo sarà necessario tirare la pasta fino ad ottenere una sfoglia fine
quasi trasparente a fine impasto coprire la pasta con un canovaccio e lasciare
riposare 30 minuti.
3.
Adesso che la
pasta è pronta tagliarne una parte e cominciare a tirare con il matterello (chi
vuole può usare la macchina per la pasta) tuttavia è meglio avere pazienza e
usare il matterello si controlla meglio la sfoglia, bene appena ottenuto un bel
disco di circa 35/40 cm di diametro cospargete con un filo di olio evo la
superficie e con le mani spargere su tutta la sfoglia, prendere il composto e
distribuirlo a tocchetti sparsi piegare due lati e ripetere l'operazione infine
richiudendo si ottiene un rettangolo lungo che taglierete a pezzi da circa otto
centimetri. Ripetere con l'altra pasta fino ad ottenere circa venti/venticinque
bocconcini, preparare una teglia con carta forno sistemare ed infornare a forno
caldo 200 gradi ventilato 35/40 minuti.
L'obiettivo principale di queste ricette è non solo il
rispetto per le tradizioni ma soprattutto l'utilizzo di materie prime a
chilometro zero e non bisogna dimenticare che il gusto i profumi e i sapori dei
prodotti freschi e fatti in casa sono al di sopra di qualsiasi tipo di cucina.

Ingrédients:
500 gr. Farine de blé dur
500 gr. Ricotta au lait de vache Ragusana
2 oignons blancs
1 bouquet de persil
sel
Poivre noir
1 morceau de levure
Huile Evo
préparation:
1. Couper l'oignon en petits cubes
et l'ajouter à la ricotta avec du persil finement haché
sel et poivre (conseil) ne pas abuser du sel car la ricotta est assez savoureuse

2. con panna,
prosciutto e ragusano DOP
La pasta fatta in casa una ricetta antica con un condimento attuale
gli ingredienti come la panna e il Prosciutto Cotto ‘Nerocotto’ sono di produzione siciliana quindi Km0.
Ingredienti 2 porzioni
Passaggi Preparazione 15/20 min.
Classica
fontana di farina al centro le uova, pizzico di sale e cominciamo ad
impastare aggiungiamo un pò di acqua tiepida in modo da legare bene
il composto
(non esagerare con
l'acqua aggiungere poco per volta) l'impasto deve essere consistente
non troppo duro,
otteniamo un bel panetto che facciamo riposare
qualche minuto.
Con
il mattarello cominciamo a tirare la pasta fino ad ottenere uno
spessore di circa due millimetri, aiutiamoci spolverando di farina ad
ogni passaggio, arrotolare la pasta formando un rettangolo per tutta
la lunghezza di circa sei o sette centimetri di larghezza e
cominciamo a tagliare a fettine di mezzo centimetro circa di
larghezza ottenendo così le nostre tagliatelle.
Prepariamo il condimento con un
filo d'olio evo facciamo dorare la cipolla tritata finemente in una
padella, appena dorata aggiungiamo il prosciutto tagliato a
striscioline sottili (quasi come le tagliatelle) facciamo sfumare con
il vino, aggiungiamo la panna mescoliamo bene il composto per qualche
minuto aggiustiamo di sale e pepe.
Buttiamo le nostre tagliatelle
in acqua bollente salata per due minuti, appena viene a galla la
possiamo scolare e metter in padella per mantecare assieme al
formaggio.
